  1. African yam bean African yam bean is one of the neglected underutilized crops with enormous potential as a food security crop. The seeds are available with local farmers especially the older generation who appreciate its value. International Institute for Tropical Agriculture (IITA) also keeps some accessions of the crop. Factors that have militated against effective use of African yam bean as a crop for the enhancement of food security include: Its beany flavor and Hard to cook phenomenon. The difficulty encountered during dehulling of this bean. Limited utilization methods. Current research efforts in our laboratory have been able to provide scientific information in the following areas.   11. Summary • The mottled brown AYB cultivar has very good potentials for use in genetic improvement of this legume. • A 14h soaking time followed by a drying period of 6h at 60oC will decorticate the seeds of several cultivars of AYB.
