  1. ROGUE COOKERS Easy and Elegant Smoked Sea Bass Recipe Ingredients 2 sea bass fillets (about 6-8 ounces each) 1 tablespoon olive oil 1 teaspoon sea salt 1/2 teaspoon black pepper 1 lemon, thinly sliced Fresh dill sprigs 2 cups wood chips (oak, hickory, or applewood recommended) Marinade 2 tablespoons soy sauce 1 tablespoon honey 1 tablespoon lemon juice 1 garlic clove, minced 1 teaspoon fresh thyme leaves Instructions Preparing the Sea Bass Rinse and Dry: Rinse the sea bass fillets under cold water and pat dry with paper towels. Marinate: In a small bowl, combine soy sauce, honey, lemon juice, minced garlic, and thyme. Place the sea bass fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor. WWW.ROGUECOOKERS.COM

  2. Preparing the Smoker Soak Wood Chips: Soak the wood chips in water for at least 30 minutes. This helps create more smoke and prevents them from burning too quickly. Preheat Smoker: Preheat your smoker to 225°F (107°C). If using a charcoal grill, set it up for indirect heat and add the soaked wood chips directly on the coals. Smoking the Sea Bass Season Fillets: Remove the sea bass from the marinade and pat dry. Brush both sides with olive oil and season with sea salt and black pepper. Arrange in Smoker: Place lemon slices and dill sprigs on top of the fillets. Arrange the sea bass in the smoker, skin-side down, on the grate. Smoke: Smoke the sea bass for 1-1.5 hours, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork. Serving Remove and Rest: Carefully remove the smoked sea bass from the smoker and let it rest for a few minutes. Garnish and Serve: Garnish with additional lemon slices and fresh dill. Serve immediately with your favorite sides, such as roasted vegetables or a fresh salad.

  3. Tips for Perfect Smoked Sea Bass Consistent Temperature: Maintain a consistent smoker temperature for even cooking. Avoid Over-smoking: Too much smoke can overpower the delicate flavor of sea bass. Experiment with Wood: Try different types of wood chips for unique flavors.
