The Introduction of Vitamin and Its Analysis Ⅰ The Introduction of Vitamin Vitamins are a kind of trace organic substances that humans and animals must obtain from foods to maintain normal physiological functions, and play an important role in human growth, metabolism and development. Vitamins are not involved in the formation of animal cells, nor do they provide energy to the essential process of life. Vitamins constitute a huge family. Currently, there are dozens of known vitamins, which can be roughly divided into two categories: fat-soluble and water-soluble. Vitamins are complex organic compounds that animals need as they seek to maintain normal growth, production, reproduction and health, but in small quantities. Organisms need vitamins to maintain optimal production performance. According to its solubility generally divided into fat soluble vitamins and water-soluble vitamins two major categories. Fat-soluble vitamins are soluble in fats and fat solvents, but not in water, including vitamins A, D, E and K, which can be extracted from fat-soluble foods. Water-soluble vitamins include B vitamins and vitamin C, which can be obtained from water-soluble foods. Ⅱ Water Soluble Vitamins Analysis Water Soluble Vitamins are a group of vitamins that are soluble in water, which often are the essential component of coenzymes or prosthetic groups, including B vitamins and ascorbic acid (vitamin C). Those Vitamins play an important role in the catalysis of enzymes. Water-soluble vitamins dissolve in water and are not stored by the body because they are eliminated in urine. Therefore, requiring a continuous daily supply in our diet. Meanwhile, their analysis is also important and indispensable. Water-soluble vitamins (including B group vitamins and Vc) are essential trace elements in the human body, with a small amount in the human body, but affect the normal growth and development of individuals. As a common nutrient fortifier, water-soluble vitamins are widely used in food production and processing. Therefore, it is of great significance to study and detect the water-soluble vitamins in this kind of food and medicine. So here we focus to review the detection technology of water-soluble vitamins in food and introduces the application of different detection technology in water soluble vitamins. At present, fluorescence, liquid chromatography, liquid chromatography- mass spectrometry, capillary electrophoresis, and microbiological methods are widely used, among which liquid chromatography is most widely used in factory laboratories because of its simple operation, high precision, accuracy and moderate cost. On the basis of the current detection technology, many scholars continue to experiment and explore, and introduce new methods and new technologies to provide a broader prospect for the study of water-soluble vitamins. Fat-soluble vitamins can be stored in large quantities in the body, mainly stored in the liver, so excessive intake can lead to toxic reaction. But those are also essential for human metabolism. In a nutshell, vitamins are of great importance for the longevity and well-being of humans. With the development of technology, the analysis of vitamins has become increasingly advanced and detailed.
