DUBAI HAS THE BEST CHOCOLATE MAKERS, LET'S TAKE A SAFARI? Dubai was the setting for our next international Chocolate Safari. Now, once you consider Dubai you almost certainly consider opulence, scorching heat, and ultra-modern buildings and hotels; you'll not necessarily consider premium chocolate…so be prepared to be amazed! Nestled between Europe and Asia, Dubai was and still is at the center of the historic spice trade. Traders and sailors have traveled the seas from China to the Mediterranean bringing back the rarest spices and ingredients. Today, Dubai may be a melting pot of cultures, cuisines, and other people with top chefs from everywhere the planet all of which contribute to the flavors of the Emirates. I want to only walk you through the highlights of this incredible safari during a wonderful multicultural city. We then took to the streets of Dubai. Now, like most major cities around the world, there are the standard chocolate shops and enormous retailers who carry some international brands that are helpful to ascertain m at so we started our discovery with a tour of a number of Dubai’s best malls before venturing a touch further to see the arty industrial units on Alserkal Avenue where we found a true pearl in Mirzam’s new café and the chocolate factory. Mirzam, the primary bean-to-bar maker in Dubai, launched in September 2016 and has already received many international awards. The assembly process, which is meant to be customer-facing, sits behind plexiglass so you'll experience each stage of the chocolate- making: from the bean store and roasting room to hand wrapping each bar. Their single-origin cocoa beans are chosen for the range of flavors you experience when tasting and rich heritage, located along the maritime Spice Route.
Using granite wheels, the roasted beans are ground for several days counting on the recipe, during a process which slowly decreases the molecule size to make incredibly smooth chocolate. The only origin collection is crafted from beans originating from Vietnam, Indonesia, Madagascar, Papua New Guinea, and India. Mirzam not only produces fantastic chocolate but it also pays the farmers they work with 6-7 times the planet cacao commodity price for his or her crops; this move allows them to figure with small and specialized providers and still pay them a good price.
