  1. What’s Missing??

  2. Yield The yield tells the number and size of servings the recipe will make. Knowing the yield in advance helps one to know if more or less food is needed – whether or not to make more or less of the food.

  3. List of Ingredients and Amounts Ingredients are listed in the exact amounts needed. The specific form of ingredient is also stated. Ingredients should be listed in the order they are to be used in the recipe in order to prevent leaving out any ingredient.

  4. Step-by-step Directions for Mixing and Handling The recipe should have directions for how to prepare it. The steps need to be listed in the order they should be done. Steps that are numbered are easy to follow and help to prevent steps from being skipped. However, some recipes are written in paragraph form. It is necessary to read and follow these directions carefully, as skipping steps is easier.

  5. Standardized Recipe Berry Smoothies Makes 4 1/2 cups, enough for 4 servings 1 medium banana (ripe, about 4 ounces), peeled and cut crosswise into eight pieces 3 1/2cups berries (about 16 ounces) 1/2cup whole milk 1/2cup white cranberry juice or apple juice pinch table salt 3 – 6 teaspoons granulated sugar 2 - 3teaspoons lemon juice 3 ice cubes (about 1 1/2 ounces total)Line rimmed baking sheet with parchment paper; arrange banana and berries in single layer on baking sheet. Taste for sugar and lemon; if desired, add more sugar or lemon and blend until combined, about 2 seconds longer. Serve immediately.

  6. 7. Narrative Form • Amount of ingredients are stated along with the directions in paragraph form • Difficult to follow unless it is a short recipe Berry Smoothies • Line rimmed baking sheet with parchment paper. Arrange 1 medium banana and 3 ½ cup berries (about 16 ounces) in single layer on baking sheet. Freeze fruit until very cold, but not frozen, about 10 minutes. Blend, puree cold fruit, ½ cup milk, ½ cup cranberry or apple juice, pinch of salt, 1 tablespoon sugar, 1 teaspoon lemon juice, and 3 cups ice until uniformly smooth, 10 to 15 seconds. • Taste for sugar and lemon; if desired, add more sugar or lemon and blend until combined, about 2 seconds longer. • Serve immediately. 8. Container Size and Type Most recipes do not state ALL the necessary equipment; however, specific equipment, such as a “9 x 9 square pan,” is sometimes listed. It is important to use the stated specific equipment so the food will not overflow or overcook.

  9. Temperature and Time Some recipes give you exact cooking temperatures and times – EX. 375o F for 15 minutes. Others will tell you how to cook the food – EX. Heat liquid until it simmers. Oven temperatures and times are for conventional ovens unless stated otherwise.

  10. Nutrition Analysis Nutrition information is not necessary for preparing a recipe, but is very useful information when planning foods to fit into a particular eating plan. Some recipes include number of calories and/or grams per serving of various nutrients.
