Chili Roasted Lentils • Ingredients: • 1 cup lentils ½ teaspoon canola oil • 1/8 teaspoon salt ½ teaspoon black pepper • Pinch of ground cumin Pinch of chili powder • Directions: • •Sift through the lentils & remove any debris, rinse, & drain. • • Place lentils in a pot, cover with water by about 2 inches. • • Gently boil the lentils just until soft enough to bite through; approximately 5-9 minutes. • • Spread lentils out thinly on sheet pans to dry. NOTE: you may need to do the above steps the day before and let the lentils dry overnight in the refrigerator. • • Mix the oil, salt, pepper, cumin & chili powder together. • • Spread lentils on a sheet pan lined with parchment paper. • • Bake at 350° until yellowish in color; approximately 20-25 minutes; stirring frequently. • • Cool and refrigerate until you’re ready to serve. LOCALFRESHDELICIOUS

Beef & Lentil Chili • Ingredients: • 1 Tablespoon Olive Oil 1 teaspoon Ground cumin • ¼ cup Onion, chopped ½ pound Ground beef • 1 clove Garlic 1 ½ cups Prepared salsa • 2 Tablespoons Green bell pepper, chopped 1 ½ cups Water • Pinch of Ground black pepper 1 tablespoon Beef base • ¾ teaspoon Chili powder ¼ cup Tomato Paste • ¼ teaspoon Paprika ¼ cup Lentils • ¼ teaspoon Onion Powder • Directions: • •Heat oil in a large pot or skillet. • • Add onions, garlic, green pepper, pepper, chili powder, paprika, onion, and ground cumin. Cook for 5 minutes. • • Add beef to sautéed vegetables and spices. • • Stir in salsa, water, beef base, and tomato paste. Mix well. Bring to a boil and then cover. Simmer slowly, stirring occasionally until thickened, about 40 minutes. • • Cook lentils separately (cover with several inches of water, and simmer for 20 minutes or until tender) and then add them into the chili during the last 20 minutes. Dry uncooked lentils could be added to the chili and cooked until tender. Adjust thickness of your chili by adding water as needed while the lentils cook and absorb liquid. Allow 30 minutes cook time if cooking lentils in the chili from dry lentils. • • Garnish with greek yogurt, shredded cheese, fresh chopped cilantro, and/or sliced jalapenos. LOCALFRESHDELICIOUS
