The Effect of Breed Type on Goat Carcass Ali Donohue
Why Goat Meat? • Increase Ethnic Diversity • Increase demand for goat meat • 1999: 450,000 • 2004: 600,000 • Average 12,000 a week in US
Breed Types Used Spanish Boer X Spanish Spanish X Angora Boer X Angora Angora
Live and Carcass Weight • Boer X Spanish had heavier live and carcass weight than Spanish goats (Oman et al. 1999). • Weights for Boer X Spanish and Spanish X Angora did not differ. • Body weight, empty BW, and hot carcass weight were greater in Boer crosses than for Spanish crosses (Cameron et al. 2001).
Carcass Bone, Fat, and Lean Weight • Carcass bone, fat, and lean weights were significantly or numerically greater for Boer crossbreds than for Spanish goats (Cameron et al. 2001). • Carcasses from Boer × Spanish and Spanish goats possessed higher (P < .05) percentages of lean and lower (P < .05) percentages of fat for the side than did carcasses from Spanish × Angora and Angora goats (Omen et al. 2000).
Carcass Bone, Fat, and Lean Weight • When the Spanish × Angora carcasses were compared to the Angora carcasses, it seemed that the addition of the Spanish breeding tended to increase lean and decrease fatness for most side on primal comparisons (Omen et al. 2000). • Feedlot goat carcasses possessed higher fat percentages and lower bone percentages than range goat carcasses (Omen et al. 1999).
