What is third wave coffee? • The third wave is the term used to describe the current trends in the coffee market • Starting with 1st wave – the initial trend for drinking instant coffee and coffee at home • Following 2nd wave – the popularity of branded chains on the high street • 3rd wave – focus on a crafted artisan product at all stages of production

How has 3rd wave coffee affected the UK coffee market? • Customers pay more attention to quality of product • Customers are better educated in coffee and their expectations for the product • Stronger and more transparent communication between roasters, distributors, baristas and customers • The rise of the independent specialist coffee shop

  4. How has it affected the education sector? • Students are very savvy to new trends • Move away from traditional canteen style catering towards a coffee shop feel • What changes have you seen at your university? Or at others?

What can you do to stay on trend with the 3rd wave coffee movement? • Well trained baristas • Look at branding and how you want to use it to demonstrate a level of skill and understanding • A move towards smaller cups – quality over quantity • Using a coffee that has provenance – Café Direct • Realise the potential that coffee has within your business
