The process to make dry chili chicken • Take a bowl and add eggs, chicken, corn flour and ginger-garlic paste. Mix all the ingredients properly. • Then add water into the bowls and make sure that the chicken pieces should be marinated well with the batter. Keep it aside in the refrigerator for 1 to 2 hours to marinate. • Take a deep pan and heat the oil. Place chicken pieces in the oil and cook on medium flame until they turn golden brown in color. • Once done, remove chicken pieces from the pan and place on an absorbent paper. • In a separate pan, add 1 - 2 tablespoon of oil and heat it over a moderate flame.
The process to make dry chili chicken • Once the oil is hot enough, add onions and saute for 2 to 3 minutes until they turn golden brown. • Then add green chilies and saute for a further few seconds (You can also use dry roasted green chilies to strengthen the taste or can use vinegar soaked green chillies to add on the flavor and taste). • Then add vinegar, chicken, soy sauce and salt. Mix them well so that chicken is well covered with the sauces. • Once done, switch off the flame and transfer chicken into the serving bowl. • Garnish the dish using roasted sesame seed and spring onions. • Your dry chilli chicken is ready. Serve it hot immediately.
