  2. Basic food hygiene • Wear a hair net • Wash hands • Remove jewellery • Cover cuts and wounds with a blue plaster • Have short clean nails free from polish • Wear a clean apron • Avoid licking fingers • Wash hands after touching nose or mouth or going to the toilet.

Preparing food safely • Clean equipment and utensils with hot soapy water • Use an anti bacterial cleaner on tables and work surfaces • Use clean clothes for washing and drying • Put used dirty equipment near the sink • Throw rubbish away • Use a probe to check the temperature of food • Use a clean spoon each time you taste • Cool food rapidly and store in a fridge or freezer • Use the correct coloured chopping board and knive
