  1. Calzones

  2. Constraints: • Must be savory • Must be suitable for one person only • Must include only one filling • Must taste good • Consideration: • Able to eat in front of a movie (easy to eat) • The ingredients are in season • The ingredients suit each others flavours • The produce is consumable by a range of people • It must taste good • The crust must be golden • The filling looks appealing

  3. Was the meal savory? • Was the meal suitable for one person only? • Did it only include only one filling? • Was the meal easy to eat? • Were the ingredients in season? • Did the ingredients complement each other? • Did the meal taste good? • Was the crust golden? • Was the dish cooked through properly? • Did the filling look appealing? criteria for evaluation

  4. The design process

  5. Brain storm of the possible fillings I could have in my calzone:

  6. Tandoori paste • chicken • Basil • Sweet potato • tbs olive oil • red onions, halved, thinly sliced • garlic cloves, thinly sliced • red wine vinegar • brown sugar • chopped fresh thyme • roasted red capsicums, thinly sliced • Pitted olives, thinly sliced • shredded fresh basil • chicken • Onion • mushrooms • sweet potato • Feta cheese • Salt • Pepper • Oil • Garlic • butter • Ricotta cheese • Rocket • Basil • Chicken • Cream • bacon

  7. Option 2: Option 1: • chicken • Onion • mushrooms • sweet potato • Feta cheese • Salt • Pepper • Oil • Garlic • butter • Tandoori paste • chicken • Basil • Sweet potato

  8. Tandoori paste • chicken • Basil • Sweet potato Option one’s advantages and Drawbacks: • Advantages: • The flavors mix really well • The colour of the inside filling would look really good. • Basil is still in season • Sweet potato’s and chicken can be purchased at any time from the supermarket • Easy and quick to prepare • Drawbacks: • The tandoori flavor is too strong for some people • If you don’t like tandoori flavor you wouldn't’t like the whole dish.

  9. chicken • Onion • mushrooms • Orange sweet potato • Feta cheese • Salt • Pepper • Oil • Rocket • Garlic • butter Option two’s advantages and Drawbacks: • Advantages: • All ingredients are able to be purchased at any time of the year. • The flavors are subtle, so if you don’t like one aspect of the dish it wont ruin the whole meal. • The flavors mix well together • Drawbacks: • It will take a lot of effort to cook everything

  10. Which calzone will I cook? I am going to cook option two because of the diversity of ingredients that tastes good together while it doesn’t have an overpowering taste. Option one has a dominant flavor, tandoori, and if the consumer doesn’tlike the tandoori flavour the wholemealwouldberuined. If chose option one i would not befollowingmyconsiderations.

  11. Producing

  12. Work plan:

  13. Changes I made during the cooking stage: • I changed the recipe of the dough • I made the dough before I prepared and cooked the sweet potato’s • Instead of sautéing the mushrooms and browning the onions at the same time, I browned the onions separately to the mushrooms. • I also added spinach leaves.

  14. My final dish:

  15. Criteria for Evaluation questions • Was the meal savory? • The meal was savory its use chicken as sauce of meat and Onion, mushrooms, sweet potato and Feta cheese as other main elements to the dish. • Was the meal suitable for one person only? • I made two small calzones which was a perfect amount for one person. • Did it only include only one filling? • I only made one filling that I used in both of my calzones. • Was the meal easy to eat? • The calzones were easy to eat as you could hold them in your hand and eat them without a knife or fork. • Where the ingredients in season? • The basil was in season and the sweet potato was at beginning of it season, although like the chicken you can purchase it anytime during the year. • Did the ingredients suit each others flavors? • The ingredients suited each other although although I would have added more mushrooms to make the taste more consistent. • Did the meal taste good? • My brother and I both thought the calzones tasted good. • Was the crust golden? • The crust was golden although it would have looked better if the goldenness was more consistent. • Was the dish cooked through properly? • The dish was cooked through properly, as I thoroughly made sure the chicken was cooked and the sweet potato's were cooked not too soft so when they went through the oven they were just soft enough. • Did the filling look appealing? • The filling looked appealing and tasty, although the brownness in the mushrooms didn’tlook as good as the rest of the dish.

  16. What changes would I make to the filling ingredients if I made them again? If I made calzones again, I would change the filling by adding more feta cheese and more mushrooms. I would add more feta because only 1/3 bites had feta cheese in it. further more I could have mashed the feta before adding it so the flavor is more consistent. I would have added more mushrooms so nearly every bit had a mushroom in it.

  17. Sensory properties of the Calzone Appearance: The golden crust made the calzone look delicious. Furthermore, the neatness of the calzone made it look professional andappealing, tempting and inviting. Flavour: The calzone was a flavoursome , ambrosial dish with all the flavors subtly working together to make a over all mouth watering dish with a slight Brackish taste. Texture: The calzone crust is crispy and crunchy until you break through into the moist, delicately stacked fillings. The chicken was cooked perfectly and the sweet potato's were soft and floury. Aroma: The calzone had a savoury aroma

  18. What would happen if you forgot to cut slits in the top of the calzone before baking? There is a chance that the filling would burst through the pastry and blow up.

  19. Time management evaluation: • Did you use your work plan? • The work plan helped to maintain my organisation. I was able to read what I was meant to be doing and a time limit • That helped me get my task done efficiently. • Did you finish this production on time • Making double the dough mixture with my partner and splitting it with her, was a good idea because we could divvy out the tasks so we had more time to do other things. I was able to finish my calzone and clean my working area before the two periods was over, with time to eat one calzone and save the other for home.

  20. In conclusion, I found the task enjoyable. I was able to meet all the constraints and considerations and follow a structured work plan efficiently and effectively. Yummmmmy! Calzone rate: 8/10 Performance in the kitchen rate: 9.5/10
