Apple and Raspberry Pinwheels • Learning Intentions • You will be able to work well as a member of a team. • You will know how to modify a recipe to make it healthier. • You will be able to use the oven and other items of kitchen equipment, effectively and safely.
Syrup 100g sugar 6 x 15 ml spoons of water 10g butter (optional) Filling 1 medium cooking apple and some raspberries or other frozen fruit. 5ml spoon lemon juice 40g sugar Scone Mix 100g plain flour 7.5 ml spoons of baking powder 25g marg Pinch of salt 75mls milk and egg mixture 35g sugar Oven 1800C/3500F/Gas 4 Ingredients
Step One - Syrup • Dissolve sugar in water, bring to boil, simmer for approximately 2-3 minutes. • Pour the syrup into each serving dish.
Step Two – Scone Mix • Rub margarine into sieved flour, baking powder and salt until the mixture resembles breadcrumbs. • Stir in the sugar
Step Three – Scone • Mix to a stiff dough with the egg and milk mixture. • Flour table, knead mixture lightly.
Step Four – Scone Mix • Roll into a rectangle approximately the same size as your recipe card. • Wash, peel, core and chop the apple finely.
Step Five – Scone Mix • Place the apple, lemon juice and sugar in a bowl. Mix well. • Spread the apple mixture on the rectangle and sprinkle over the raspberries or other fruit.
Step Six – Scone Mix • Roll up in Swiss roll fashion. • Cut into six slices. • Place pinwheels flat side uppermost in dish.
Step Seven – Scone Mix • Place dishes on baking tin. • Bake for approximately 20 minutes. • Serve
